Instant Pot® Honey Ginger Chicken Legs

These Honey Ginger Chicken Legs are full of savory goodness with each and every bite. Both the men in my family ate them up. The honey gives them a bit of sweetness but the soy and ginger balance the flavors so well. And, the convenience of the Instant Pot means I can get this family dinner idea on the table with ease.

I was searching for a recipe for bone-in chicken when I came across one for wings in the Instant Pot®.

Honestly, I was skeptical. Because an Instant Pot is a pressure cooker and that means the meat would steam rather than sear. I prefer seared meat. But, after reading through the recipe I realized that once the chicken was cooked they set them on a roasting pan and seared them under the broiler.

That made them sound much more appetizing to me.

So, I decided to adapt the recipe a bit for some chicken legs I had in the fridge.

I recently purchased a small 3 qt. Instant Pot® for my family of three. I use it enough times during the week to keep it out on the counter. I really like that I can set it and walk away.

That’s what makes it convenient. I can’t say the cooking time is less, because when you let it naturally release, plus cook time, it’s about the same as if I were cooking on the stove. But, it does come in handy when I’ve forgotten to thaw meat. Or when I can’t stand and watch the cooking pot.

First sprinkle chicken legs with salt and pepper, then put the chicken on the rack of your Instant Pot.

Once the chicken has cooked, and steam has been released remove the legs and place on a parchment lined baking sheet.

Brush with the glaze. And place under the broiler for just a few minutes to sear the meat. This gives you the best flavor letting the sauce gently carmelize.

Instant Pot® Honey Ginger Chicken Legs

Cook Time: 30 minutes
Additional Time: 4 minutes 3 seconds
Total Time: 44 minutes 3 seconds

This simple Asian style honey ginger chicken legs can be put together in no-time but has flavors that zing on the tongue.

Ingredients

  • 2-2.5 lbs. chicken legs
  • Salt and black pepper
  • 1/4 C. soy sauce (or liquid aminos)
  • 2 T. sesame oil
  • 3 T. honey, preferably local
  • 1 T. unsalted butter
  • 4 garlic cloves, minced
  • 1/2 t. ground ginger
  • Toasted Sesame seeds, for garnish

Instructions

  1. Season legs with salt and black pepper, to taste. Place metal trivet inside Instant Pot® and add one cup of water. Arrange seasoned legs on top of the trivet before securing the cover in place. Switch the vent to “Sealing” and set the “Pressure” setting to 10 minutes.
  2. Next, prepare the honey ginger sauce. In a glass or microwave safe bowl mix together the soy sauce, honey, sesame oil, along with the butter, ginger and minced garlic. Heat in the microwave for 1 minute. Then whisk all ingredients well. Let sit while chicken is cooking.
  3. Line a roasting pan with parchment paper; you can also set a rack on the pan if you wish.
  4. Meanwhile, position top oven rack in the middle position and pre-heat broiler to high.
  5. Place the roasting pan in the oven under the broiler
    and set a timer for 3-4 minutes.
  6. Remove from oven and toss the wings with half of the remaining honey ginger sauce. Sprinkle with roasted sesame seeds and serve immediately with the remaining sauce on the side.

Notes

This recipe is written for fresh or thawed chicken legs. If using frozen
wings, add 3-4 minutes to the active cook time.
