Sometimes to go out for a romantic dinner is impossible! Especially, when you are stuck at home because all the restaurants are closed, and a national quarantine is occurring. Or, maybe just because you are a parent to little children. But, date nights are important for the health of your marriage relationship. This romantic dinner idea is just perfect for those nights when you have to stay in but still want to enjoy the company of your beloved spouse.
Sometimes, you just have to put the little ones to bed early. Settle them down with some warm milk, a low-key night time book, and soft music in their room.

Recipe for Beef Tenderloin with Mushrooms
Start by pre-heating your oven to 350° and heat a good quality heavy-bottomed skillet over medium heat with the 1 T. olive oil drizzled in.
I prefer to cook in quality cast-iron skillets. But, stainless steel that has a heavy bottom will work just as well.
And the great thing about cast-iron is you can prep ingredients on the stove in the skillet, then move it directly into the oven for the final cooking process. So, one skillet makes for easier clean-up.
Heat the olive oil, shallots, and mushrooms over medium heat until the softened and shallots are translucent. Be careful to not overcook.
Mix together the remaining oil, rosemary and garlic in a small bowl, season with salt and pepper. Rub this mixture on your beef tenderloin.
In the pan, add sliced red onions. Lay your tenderloin on top and place in the oven for 45 to 50 minutes.
I suggest serving this with mashed potatoes or mashed cauliflower and spooning the mushrooms over the top.
Now’s the time to prep the mashed potatoes, or mashed cauliflower. This is so easy to make when using an instant pot. Let it do the work of softening the vegetables for super easy smashing when it’s complete.
While everything is cooking, you can get the kids to bed, and get yourself dressed, and the table set.
Just before your beloved gets home, toss together a simple bagged salad with grapes, or strawberries, drizzled with balsamic vinaigrette. The added fruit to this meal will make a wonderful counterpoint to the richness of the beef.
Slice the tenderloin at an angle, and serve the mushrooms over the mashed potatoes for an elegantly simply romantic dinner.
For this beef tenderloin recipe you will need the following items:
- extra virgin olive oil
- baby bella mushrooms
- fresh rosemary leaves
- sea salt and black pepper
- 3 lbs. beef tenderloin roast
- red onion
- 3 T. olive oil, divided
- 16 oz. baby bella mushrooms, sliced
- 1 large shallots, sliced
- 3 T. fresh rosemary leaves, chopped
- 3 T. garlic, minced
- Sea salt and black pepper, to taste
- 3 lbs. beef tenderloin roast
- 1 large red onion, sliced
1.Place oven rack in center position and pre-heat oven to 350°F.
2.Pour one tablespoon of olive oil in a large, high-sided skillet over medium heat. Add the mushroom and shallots and season with salt and black pepper, to taste. Cook, stirring occasionally, until the mushrooms and shallots develop a bit of color and soften, approximately 4-5 minutes. Remove from heat and transfer to a bowl and set aside.
3.Mix together in a small bowl remaining olive oil, rosemary and garlic and season with salt and black pepper. Rub the rosemary-garlic mixture on top and all along the sides of the beef.
4.Arrange the sliced red onion on the bottom of the same skillet and place the seasoned beef tenderloin on top of the onions.
5.Arrange the mushroom and shallot mixture around the sides of the beef and place in the pre-heated oven for 45-50 minutes for medium-rare or longer for more well done results.
6.Remove from oven and rest for 10-15 minutes before serving. Enjoy!
Actual cooking time will vary depending on a number of factors, including the starting internal temperature of the beef. Therefore, allow the beef to rest at room temperature for 20-30 minutes before roasting and use an instant-read thermometer to check to see if the meat is done. For medium-rare, remove from oven at 140°F. The temperature will rise to 145°F as it rests.
