Classic Family Vegetable Beef Soup Recipe
Winter is the perfect time to cook up a pot of soup for your family dinner. One of my favorites is vegetable soup. Growing up that’s what my family called it -Vegetable Soup. It is however, a vegetable beef soup because it has ground beef in it. I honestly didn’t know until I was an adult that anyone ever made vegetable soup without ground beef in it.
This is a soup that was, and still is, a staple in my family and extended family’s recipe repertoire. It’s one that we go to often because it’s filling, comforting and made from what’s on hand and it’s good for you.
Each member of my dad’s family has their own version and it can be adapted to your preferences as well. Today, I’m sharing with you how I prefer to make it.

How to Make this Vegetable Beef Soup
This is a simple recipe that requires very little prep work. You can literally use whatever you have on-hand to make the recipe.
You’ll need a few basic ingredients. I’m sharing this list of what we use, but below you I’ll give you tips for how you can adapt it with ease.
Ingredients for Vegetable Beef Soup
- 1 1/2 lbs. ground beef
- 1 bag frozen mixed vegetables
- 2 or 3 potatoes
- 1 onion
- 1 head or bag of shredded cabbage
- ¼ tsp. garlic powder
- ¼ tsp. parsley
- salt & pepper
- sugar
- tomato paste
- 2 cans tomato sauce
- water
How to make the vegetable soup
Chop your onion, and any other veggies you might want to add to the soup.
Cook the ground beef and onion in a medium pan.
Then add all the ingredients to a medium size stock pot and add enough water to cover the vegetables.
Let simmer for about an hour on medium heat.
How you can Adapt this Vegetable Soup Recipe
So I keep frozen vegetables in my deep freeze so I usually have these available and it makes it simple to throw them into the cooking pot. Arlene at Flour on My Face has a Crock Pot Vegetarian Soup that would be the perfect alternative.
If you don’t have mixed vegetables on-hand you can substitute a variety of options.
- canned or frozen green beans
- canned or frozen peas
- canned or frozen corn
- canned potatoes
- canned carrots
- you can also use fresh vegetables as well
Another great idea is to use any leftover veggies. Simply place any vegetable leftovers you have into a zip bag and place in the freezer. Keep adding to it until it gets full. Then, it’s time to make up a batch of vegetable beef soup.
Vegetable Beef Soup
Ingredients
- Vegetable Soup
- 1 1/2 lbs. Ground Beef
- 1 Bag Frozen Mixed Vegetables
- 2 or 3 Potatoes, peeled and diced
- 1 Onion, diced
- Cabbage, chopped to taste
- 1/2 tsp. garlic powder
- 1 tsp. parsley
- salt & pepper
- 1 teaspoon sugar
- 1 can tomato paste
- 2 cans tomato sauce
- water
Instructions
- In a medium skillet brown the ground beef with the onions. Once cooked, drain the oil from the meat.
- Next, add all ingredients in a large pot. Add water to cover veggies well. Cook on medium heat for about 1 hour.
Notes
You can add more vegetables if you like, whatever kind you want.
