Buffalo Chicken Taquitos are a Delectable Family Dinner Idea
My family is small. So it doesn’t take a lot of ingredients to make up a family meal. We often like to curl up on the couch with dinner and a movie while we eat dinner. Of course, eating dinner on the couch means simple foods. That’s why Buffalo Chicken Taquitos are such a great family dinner idea. They aren’t too messy like some dinners can be. And, any leftovers make for a fantastic take along lunch the next day.

Even if you have a larger family this meal is so easy to put together. And, it’s a frugal meal too!
Tortillas are very affordable and you can utilize frozen chicken, or a precooked rotisserie chicken from the grocery store. Or, use up leftover chicken from a different meal.
By using precooked chicken the whole meal is even simpler to cook. In as little as 30 minutes you could have dinner ready to go.

What you Need for Buffalo Chicken Taquitos
A package of cream cheese
Ranch dressing
Buffalo wing sauce
Cooked chicken (I use shredded chicken from a rotisserie chicken)
Cheddar cheese
Fajita size, Tortillas (I prefer low-carb Mission Brand)
Olive oil cooking spray
How to Make Buffalo Chicken Taquitos
Start by pre-heating your oven to 450 degrees. Pre-heating saves you time because the oven can get to temperature while you prep the food. This means actual cooking time is less than if you put the food into a cold oven.
While your oven is pre-heating, mix the cream cheese, ranch dressing, and buffalo wing sauce together until smooth.
Next, if you haven’t already done so, shred your chicken. You can make this process so much easier by placing in a stand mixer with the paddle blade. Just add your precooked boneless chicken breasts to the bowl with the paddle attachment. Then turn on the mixer to medium for just a few seconds. The chicken shreds beautifully and you won’t have to chop at all.
Add the shredded chicken and shredded cheese to the Buffalo sauce mixture. Use a wooden spoon or silicon spatula to mix well. Reserve a small amount, about 1/8 of a cup, of the shredded cheese for garnish at the end.
Spoon a small amount, one to two tablespoons, of the chicken mixture onto the middle of each tortilla and roll up into taquitos.
Spray a cookie sheet with a non-stick spray. I prefer to use olive oil spray.
Place each of the taquitos seam side down on the cookie sheet in a single layer. Then, spray the top of the taquitos with the olive oil spray again. This helps them to get crisp on top.
Place in the oven, and bake them for 10 minutes, using tongs, turn them over, and bake for another 5 minutes.
Remove from oven and sprinkle some reserved cheese over the top. My family prefers to dip into sour cream. But, you can also serve with a dipping cup of enchilada sauce or salsa.
Buffalo Chicken Taquitos
Ingredients
- 1 - 8 oz. pkg. of cream cheese, softened
- 1/2 cup ranch dressing
- 1/2 cup buffalo wing sauce
- 6 cups shredded chicken (I use shredded chicken from a rotisserie chicken)
- 1 cup shredded cheddar cheese
- 24 fajita low-carb mission flour tortillas
- non-stick coconut oil spray
Instructions
- Preheat the oven to 450 degrees.
- Mix the cream cheese, ranch dressing, and buffalo wing sauce together until smooth.
- Add the shredded chicken and cheese and mix well.
- Place chicken mixture across a flour tortilla and roll up into taquitos.
- Place them seam side down on a cookie sheet that has been sprayed with non-stick spray.
- Repeat until all the tortillas have been used up.
- Spray the top of the taquitos with non-stick spray.
- Bake them for 10 minutes, turn them over, then bake them for another 5 minutes.
