Ground Turkey Burrito a Great Family Dinner Idea
I like simple and affordable summer dinner ideas. Have you noticed how the price of ground beef has risen lately? I sure have! So I’ve been using ground turkey instead. Turkey is both a lower cost and because it’s generally lower in fat it’s healthier too. Which makes this ground turkey burrito recipe a great family dinner idea.
What is it about burritos that just make your mouth water looking at them? It’s like a happy treat every time I bite into one. I enjoy having them with nachos! But, a simple side salad is also a great side dish.

Ingredients You’ll Need for the Ground Turkey Burrito Recipe
- ground turkey
- extra-virgin olive oil
- chili powder
- smoked paprika
- garlic powder
- onion powder
- cumin powder
- tomato paste
- half of a sweet onion
- green bell pepper
- long-grain white rice (Jasmine works well)
- chicken stock (or your choice of broth)
- garlic cloves
- Roma tomatoes
- tomato bouillon
- 1 ripe avocado
- a lime
- iceberg lettuce
- a tomato
- Colby jack cheese
- 10 flour tortillas

It’s easy to cook the meat. Simply heat the olive oil in a large frying pan over low medium heat. I prefer to use a large cast iron pan. Add in the vegetables and cook until they start to become translucent and tender.
While the veggies are cooking, add the turkey to a medium bowl and mix together with the seasonings.
Once the veggies are tender, add the turkey to the pan and cook through.
For the rice you’ll start by adding the olive oil to a medium pot and heating it over medium heat. Once it’s hot, add the rice and salt and stir well to coat all of the rice in oil. Then, let the rice cook in the oil, stirring regularly to toast the rice. It will soften and start brown.
In the meantime, add the onion, broth, garlic, tomatoes and bouillon to a blender and blend until smooth. Pour this mix, carefully over the rice once it has browned. Bring to a boil, reduce heat to medium and cook covered for 20 minutes.
Check the rice after 20 minutes. If there is still a lot of liquid let it cook 3-5 more minutes, and continue checking it until the liquid has been absorbed into the rice. Let sit for about 5 minutes. Then fluff with a fork.
If you want to include guacamole in your burrito, start by removing the peel of the avocado and smashing it in a small bowl. Add the seasonings and lime juice, and mix thoroughly. Let the guacamole sit for up to ten minutes for the avocado to absorb the spices. Give it another stir.
When you are ready to assemble the burrito, warming the tortillas in a pan or in the microwave. Spread a layer of guacamole (if utilizing) into the middle of the tortilla leaving space to close it.
Next, layer the rice, turkey, cheese, lettuce and tomatoes. Fold and roll up the tortilla. Serve with sour cream and salsa, and maybe a simple salad on the side.
Easy Ground Turkey Burrito Recipe
Ingredients
- 1 lb. ground turkey
- 2 T. extra-virgin olive oil
- 2 teaspoons of chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon of salt
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of cumin powder
- 1 tablespoon of tomato paste
- ½ diced white onion
- ½ diced green pepper (optional)
INGREDIENTS FOR THE RICE
- 1 cup of long-grain white rice (Jasmine works well)
- 2 cups of chicken stock (or your choice of broth)
- ¼ sweet onion, diced
- 2 garlic cloves, minced
- 2 large Roma tomatoes
- 1 teaspoon of salt
- 2 teaspoons of tomato bouillon, or 1 tablespoon tomato paste
- 2 tablespoons of olive oil
INGREDIENTS FOR GUACAMOLE (OPTIONAL)
- 1 ripe avocado
- ½ teaspoon of garlic powder
- ½ teaspoon of chili powder
- Juice from ½ a lime
- Salt to taste
INGREDIENTS FOR BURRITO ASSEMBLY
- 1 cup of shredded iceberg lettuce, shredded
- 1 tomato, diced
- ½ cup of Colby jack cheese, shredded
- 10 burrito size flour tortillas
Instructions
Heat the olive oil in a large frying pan over low medium heat. Add the diced onion to the pan and let it cook until they start to become translucent. Then add the bell pepper to the pan and cook until they become tender.
In the meantime, add the turkey to a medium/large bowl and season with the cayenne, salt, garlic powder, onion powder, cumin powder and tomato bouillon and mix it all together.
Once the veggies are tender, add the turkey to the pan and cook through.
Drain the juices from the turkey and remove it from the pan, serve immediately.
Instructions to make Mexican red rice:
Start by adding the olive oil to a medium pot and heating it over medium heat.
Once it’s hot, add the rice and salt and stir well to coat all of the rice in oil. Let it cook and stir every two minutes until the rice starts to turn a light brown color.
Add the onion, chicken broth, garlic, tomatoes and tomato bouillon to a blender and blend until smooth.
Once the rice has browned up a bit, pour in the tomato mix. (Be careful, as the water will start to pop and sizzle.)
Bring the rice to a boil over high heat and reduce to low medium heat. Cover with a lid and let it cook for 20 minutes.
Once it has cooked, remove the lid and check to see how much moisture is left. If there is a lot, turn the heat down and let it cook with the lid off for 3-5 more minutes. If the moisture is gone, remove the lid, turn the heat off and let it sit for five to six minutes.
Fluff the rice and serve.

Instructions to make guacamole:
Remove the peel and smash the avocado in a small bowl.
Add the garlic powder, chili powder, lime juice and salt to the bowl, mix thoroughly and let it sit for five to ten minutes to allow the garlic powder and salt to incorporate well.

Start by warming the tortillas in a pan or in the microwave.
Spread a layer of guacamole into the middle of the tortilla leaving space to close it.
Next, layer the rice, turkey, cheese, lettuce and tomatoes.
Fold and roll up the tortilla and serve immediately with salsa or sour cream.

Add a Delicious Dessert
For dessert I like fruit salsa with cinnamon topped tortilla crisps.
It’s so easy to make these! Just spread 2 or 3 tortillas with butter, sprinkled cinnamon sugar on top, and cut into triangles. Set them on a cookie sheet, and pop in the oven at 400 for 8-12 minutes, until crisp. Then use these to dip into a sweet & cool fruit salsa.
